The current research has the objective of determining the fondas’ influence and their artisanal foods as a form of attracting gastronomic tourism to the city of Puebla.
An exploratory research was conducted that included the revision of documents. There were also secondary information sources related to: fondas, artisanal foods and gastronomic tourism obtained from articles, magazines, reports and internet sites. Lastly this research was complimented with a field research on fondas and their gastronomy in the historical Centre of Puebla.
The results obtained allowed us to determine that the city of Puebla has a high affluence of tourists because of its World Heritage status and because it also offers a great variety of traditional dishes that tourists enjoy.
