To the outbreak of the COVID-19 pandemic had impact on Food and Beverage Industry. Many restrictions and sanitary protocols were place on site to guarantee the safety of customers. As of January 2021, restaurants in Mexico faced low customers attendance due to different factors; one of them is mistrust in sanitary measures from customers. In order to help build customer trust and encourage their return to restaurants, this project was implemented to try the use of UV lamps in the disinfection protocol to determine their usability and the effect on trust. The research was carried out at the restaurant “El Callejón” in the Magic Town of Tlatlauquitepec, Mexico, using the case study methodology, with a descriptive depth, implementing a digital survey. The results of this study reflect that the use of this technology is a complement to encourage customers to return to Food and Beverage Stores; informing customers of their benefits.
