Imbabura, ancestral delight: Imbabura, deleite ancestral

Abstract

The nutrition is one of the human needs. The ways of preparation, which include the cooking has changed throughout the
times, it goes from the “pachamanca”, the wood fire up to currently the induction kitchens. Nowadays nevertheless any dish
prepared are using some ancestral technics and are well fancied; among these technics we could mention the cooking in the
wooden fire, wood oven, the use of ceramic pots or bronze pots.
The Imbabura Province is located at the northern part of Ecuador, it is well known for preserving traditions such as cooking
technics and the use of ancestral utensils for cooking. In some places as Otavalo or Natabuela in special occasions still make
the “pachamanca”. The use of these technics or utensils have permitted to this province be awarded for the recognition of
local and foreign people, and receive the preference of its citizens, visitors, tourists when they have to select a place to eat.
